Belonging to the same family as chard and spinach, both the leaves and root can be eaten - the leaves have a bitter taste whereas the round root is sweet. Typically a rich purple colour, beetroot can also be white or golden. Due to its high sugar content, beetroot is delicious eaten raw but is more typically cooked or pickled.

Basil Pesto
2 cups fresh basil
1/4 cup grated parmesan cheese
1/4 cup pine nuts
1 garlic clove
1/2 teaspoon salt
1/4 cup olive oil
- Place the basil in a blender.
- Pour in about 1/4 cup of the olive oil, and blend basil into a paste.
- Gradually add pine nuts, Parmesan cheese, garlic, and remaining oil.
- Continue to blend until smooth.
- Season your main dish with the sauce.
